Spiced Beef Kabobs with Mint-Yogurt Sauce

Serves half dozen

  1. 2.five - 3 lbs. boneless sirloin
  2. ii tbsp. olive oil
  3. kosher salt, to taste
  4. black pepper, to taste
  5. one/2 tsp. ground cumin
  6. i/4 tsp. ground corriander
  7. ane/8 tsp. cayenne pepper (optional/or more than to taste)
  8. 1 tbsp. red wine or apple cider vinegar
  9. ane blood-red bell pepper, seeds/stem removed and cut into 1.5 inch cubes
  10. i light-green bong pepper, seeds/stalk removed and cut into one.five inch cubes
  11. 1 cherry onion, cutting into big chunks
  12. 8-x wooden skewers
  1. 1 cup evidently yogurt
  2. 2 tbsp. olive oil
  3. salt and pepper, to sense of taste
  4. 2 cloves garlic, minced
  5. 1 heaping tbsp. freshly chopped mint leaves
  6. juice of ane lemon (about 2 tbsp.)

  1. Trim off excess fatty from the steak. Cut into i.5 inch cubes and place in a big basin.
  2. Add together olive oil, vinegar, cumin, corriander, cayenne, and enough of common salt and pepper. toss to coat evenly.
  3. Cover and permit marinate for 30 minutes at room temp.
  4. Meanwhile, combine all of the yogurt sauce ingredients in a bowl. Stir to combine. Encompass and refrigerate until fix to serve.
